Crispy quinoa salad 🌾

This is a great dish to use up that leftover quinoa. And it comes together in under 15min! It’s the perfect quick, healthy, and flavourful weekday dinner 😋

1 cup quinoa, cooked and cooled
2 tsp sesame oil
diamondcrystalsalt kosher salt
Pepper

2-3 broccolini (or sub regular broccoli)
5 asparagus spears
2 tsp soy sauce
Dehydrated onion powder
Pepper
Granulated garlic powder

1 egg

1/4 an avocado, peeled and chopped
1 green onion, diced
Black (or white) sesame seeds

Cut the broccolini and asparagus into 2” chunks. Then add them to a medium fry pan over med/high heat along with the soy sauce and a generous sprinkle of onion powder, garlic powder, and pepper. Cook for 2-3min, occasionally stirring, until warm but still crisp. Remove from the pan and set aside. In the same pan, add the sesame oil and heat. Add the quinoa, salt, and pepper stirring to coat. Continue to cook for 5ish minutes or till crisp. Meanwhile, in a second pan cook an egg sunny side up ensuring the yolk is still runny. Once quinoa is crisp add the veggies into the quinoa, stir, and allow to cook for 1min to reheat the veggies. To assemble spoon quinoa mixture onto a plate. Top with avocado, green onion, and sesame seeds and lastly the egg. Slice the egg and stir to coat the salad in the yolk.
